Rich, airy, and indulgent chocolate mousse you can whip up in minutes. This simple yet elegant dessert is a crowd-pleaser and a perfect way to end any meal.

Ingredients

  • Dark Chocolate: 200 g (70% cocoa, chopped)
  • Eggs: 3 large (separated)
  • Sugar: 50 g
  • Heavy Whipping Cream: 250 ml
  • Vanilla Extract: 1 tsp
  • Salt: a pinch

Method

  1. Melt the Chocolate: Gently melt the chopped dark chocolate in a heatproof bowl set over a pot of simmering water (a double boiler). Stir occasionally until smooth. Remove from heat and let it cool slightly.
  2. Whip the Egg Whites: In a clean, dry bowl, whip the egg whites with a pinch of salt using an electric mixer until they become foamy. Gradually add the sugar and continue to beat until you achieve stiff, glossy peaks. Set aside.
  3. Whip the Cream: In a separate bowl, whip the heavy whipping cream with the vanilla extract until soft peaks form. Do not overmix.
  4. Combine Chocolate & Yolks: Whisk the egg yolks into the slightly cooled melted chocolate until the mixture is smooth and fully combined.
  5. Fold it Together: First, gently fold the whipped cream into the chocolate mixture with a spatula. Then, carefully fold in the stiffly beaten egg whites in two or three additions. Be gentle to keep the mixture light and airy.
  6. Chill: Spoon the finished mousse into individual serving glasses or a large serving bowl. Cover and refrigerate for at least 2 hours, or until set.
