Ingredients
- Dark Chocolate: 200 g (70% cocoa, chopped)
- Eggs: 3 large (separated)
- Sugar: 50 g
- Heavy Whipping Cream: 250 ml
- Vanilla Extract: 1 tsp

Method
- Melt the Chocolate: Gently melt the chopped dark chocolate in a heatproof bowl set over a pot of simmering water (a double boiler). Stir occasionally until smooth. Remove from heat and let it cool slightly.
- Whip the Egg Whites: In a clean, dry bowl, whip the egg whites with a pinch of salt using an electric mixer until they become foamy. Gradually add the sugar and continue to beat until you achieve stiff, glossy peaks. Set aside.
- Whip the Cream: In a separate bowl, whip the heavy whipping cream with the vanilla extract until soft peaks form. Do not overmix.
- Combine Chocolate & Yolks: Whisk the egg yolks into the slightly cooled melted chocolate until the mixture is smooth and fully combined.
- Fold it Together: First, gently fold the whipped cream into the chocolate mixture with a spatula. Then, carefully fold in the stiffly beaten egg whites in two or three additions. Be gentle to keep the mixture light and airy.
- Chill: Spoon the finished mousse into individual serving glasses or a large serving bowl. Cover and refrigerate for at least 2 hours, or until set.
