Ingredients

  • Cooked Quinoa – 2 cups
  • Avocado (diced) – 2 large
  • Cherry Tomatoes (halved) – 1 cup
  • Cucumber (diced) – 1 cup
  • Red Onion (finely chopped) – 1/4 cup
  • Fresh Cilantro (chopped) – 1/4 cup
For the dressing:
  • Olive Oil – 3 tbsp
  • Lime Juice – 2 tbsp
  • Salt & Black Pepper – to taste

Method

  1. Prepare the Quinoa: Cook quinoa according to package directions. Once cooked, fluff with a fork and let it cool completely.
  2. Chop Vegetables: While the quinoa is cooling, dice the avocado, tomatoes, cucumber, and red onion. Chop the fresh cilantro.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper until well combined.
