Ingredients
- Cooked Quinoa – 2 cups
- Avocado (diced) – 2 large
- Cherry Tomatoes (halved) – 1 cup
- Cucumber (diced) – 1 cup
- Red Onion (finely chopped) – 1/4 cup
- Fresh Cilantro (chopped) – 1/4 cup
For the dressing:
- Olive Oil – 3 tbsp
- Lime Juice – 2 tbsp
- Salt & Black Pepper – to taste

Method
- Prepare the Quinoa: Cook quinoa according to package directions. Once cooked, fluff with a fork and let it cool completely.
- Chop Vegetables: While the quinoa is cooling, dice the avocado, tomatoes, cucumber, and red onion. Chop the fresh cilantro.
- Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper until well combined.
- Combine: In a large mixing bowl, add the cooled quinoa, diced vegetables, and fresh cilantro.
- Toss and Serve: Pour the dressing over the salad and toss gently until all ingredients are well coated. Serve immediately or chill for a bit to let the flavors meld.
