Method

  1. Combine Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, sugar, and salt. Make a well in the center.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, and melted butter until well combined.
  3. Mix Batter: Pour the wet ingredients into the dry ingredients. Stir just until the batter is smooth. A few small lumps are okay; do not overmix.
  4. Cook Pancakes: Heat a non-stick pan or griddle over medium heat. Lightly grease if needed. Pour about ¼ cup of batter for each pancake.
  5. Flip & Finish: Cook for about 2-3 minutes, or until you see bubbles forming on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until it's golden brown.
  6. Serve: Serve your fluffy pancakes warm, topped with maple syrup, fresh berries, or a dollop of whipped cream.
