This easy chicken curry is rich, flavorful, and perfect for a comforting meal. Made with aromatic spices and tender chicken, it pairs wonderfully with rice or warm naan.
Ingredients
- Chicken: 500 g (cut into pieces)
- Onions: 2 (finely chopped)
- Tomatoes: 2 (pureed)
- Curry powder: 2 tbsp
- Garlic: 2 cloves (minced)
- Ginger paste: 1 tsp
- Coconut milk: 1 cup
- Oil: 2 tbsp
- Salt: to taste

Method
- Sauté Onions: Heat the oil in a large pan or pot over medium heat. Add the finely chopped onions and sauté, stirring occasionally, for 5-7 minutes, or until they become soft, translucent, and a light golden-brown color.
- Add Aromatics: Add the minced garlic and ginger paste to the pan. Cook for about 1 minute, stirring continuously, until the raw smell of the ginger and garlic disappears and they become fragrant.
- Brown the Chicken: Add the chicken pieces to the pan. Cook for 5-7 minutes, turning occasionally, until the chicken is lightly browned on all sides. This helps to seal in the juices.
- Add Spices and Tomatoes: Stir in the curry powder and mix well, letting the spices toast with the chicken for about 30 seconds. Pour in the pureed tomatoes and a pinch of salt. Cook, stirring, for another 5 minutes, allowing the tomato puree to reduce and the oil to separate from the masala.
- Simmer: Pour in the coconut milk. Stir to combine everything and bring the curry to a gentle simmer. Reduce the heat to low, cover the pan, and let it cook for 15-20 minutes, or until the chicken is tender and fully cooked through.
- Serve: Stir one last time and check for seasoning, adding more salt if needed. Serve the chicken curry hot with steamed rice, naan, or roti.
