Ingredients

  • Cucumbers: 2 (chopped)
  • Tomatoes: 2 (chopped)
  • Red onion: 1 (thinly sliced)
  • Kalamata olives: ½ cup
  • Feta cheese: 100 g (cubed or crumbled)
  • Olive oil: 2 tbsp (extra virgin preferred)
  • Dried oregano: 1 tsp
  • Salt and pepper: to taste

Method

  1. Prepare Vegetables: In a large mixing bowl, combine the chopped cucumbers, chopped tomatoes, thinly sliced red onion, and kalamata olives.
  2. Dress the Salad: Drizzle the olive oil generously over the vegetables. Sprinkle with dried oregano, salt, and freshly ground black pepper to taste.
  3. Toss Gently: Gently toss all the ingredients together until everything is well coated with the dressing and spices. Be careful not to mash the vegetables.
  4. Add Feta & Serve: Just before serving, gently fold in the cubed or crumbled feta cheese. Serve immediately as a refreshing side dish or a light meal.
